Soak black beans in water for 1/2 hour and drain. Chop onion finely. Crush garlic and ginger. Skin tomatoes and cut into four pieces. Dice aubergines and courgettes finely.
Cooking
Heat oil in a heavy pan. When hot ass black beans, onion, garlic, ginger and stir-fry for 2 mins on a medium heat. Add tomatoes, aubergines, courgettes and soya bean paste and continue to fry gently for 5 minutes. Add vegetable stock. Stir and leave to simmer for 20 mins. Add wine, sugar, soy sauce, hoisin sauce and MSG: stir and continue to simmer for 20 mins or until the liquid begins to thicken. Add sesame oil and stir.
Enjoy.
I tend to keep a jar of this in my fridge and add the sauce to loads of different dishes.
