Basic Green Chile Sauce

INGREDIENTS
    • 2 T vegetable oil
    • 1 cup chopped onion
    • 4 T flour
    • 2 cups chopped mild green chile (or combine with jalapeno for more heat)
    • 2 cups vegetable broth
    • 1/2 t garlic powder
    • 1 1/2 t salt

METHOD
Heat oil on medium heat in medium sized saucepan until hot. Add onions & saute them until tender. Add the flour & cook it until it's browned while stirring constantly to make a roux. Add the remaining ingredients and simmer the sauce for 20 minutes.

Makes 4 cups.
