Maazat Zaytoon (Palestinian Olive Dip)

INGREDIENTS
    • 2 cups green olives, pitted and washed
    • 4 T tahini
    • 2 T chopped fresh cilantro (coriander)
    • 1 T lemon juice
    • 2 cloves garlic, crushed
    • 1/8 t cayenne
    • 1 small tomato, finely chopped
    • 1 T olive oil

METHOD
Place all ingredients except the tomato and olive oil in a blender and blend until smooth.

Spread on a serving platter and refrigerate for 1 hour. Garnish with tomato pieces, sprinkle with oil and serve.
