Mock Bearnaise Sauce

INGREDIENTS
    • 4 oz / 115 g silken tofu, blended
    • 4 minced scallions
    • 2/3 cup dry white wine
    • 2 T vinegar
    • 2 t thyme leaves, minced
    • 1/2 t dried sage
    • 1 T tarragon leaves, minced
    • 1/2 t black pepper
    • 1/4 t saffron threads
    • 1/2 t grated lemon rind
    • 1/2 t grated orange rind
    • 1/4 cup lemon juice
    • 1/4 cup orange juice
    • 2 t nutritional yeast
    • 1/2 cup milk substitute
    • Salt to taste

METHOD
Bring the wine, scallions & vinegar to boil in a saucepan. Cook to reduce by half then add the thyme, sage, tarragon, pepper, saffron, grated fruit rinds, & fruit juices. Cook to reduce by half again. Remove from the heat and stir in the nutritional yeast, tofu, and milk substitute. Add salt to taste and serve warm.
