Parsley Tofu Dressing
Condiments - Dressing -

INGREDIENTS
16 ox / 450 g soft or silken tofu
1 cup minced onion
1/2 cup finely chopped fresh parsley sprigs
3 T lemon juice
1/2 t white pepper
1 t salt (or tamari to taste)
1/4 cup water
3 T olive oil
METHOD
Combine everything and blend in a blender until smooth.
Yields 2 cups.
