Pico De Gallo Salsa

INGREDIENTS
6-10 dried de Arbol chiles
Boiliing water
1 onion, finely chopped
2 tomatoes, finely chopped
3 cloves garlic, finely chopped
2-3 T fresh coriander (cilantro), finely chopped
1/4 cup olive oil
2 T red wine vinegar
Salt and pepper, to taste
Pinch of sugar
METHOD
De-stem the chiles. Soak in just boiled water for 20 minutes. Puree with some of the soaking water and sieve.
Finely chop the onion, tomatoes, garlic and coriander (cilantro). Mix in a bowl with olive oil and red wine vinegar.
Season with salt & pepper and a pinch of sugar. Let stand for 1/2 hour.
