Pineapple Chutney
Condiments - Chutney -

INGREDIENTS
1 cup pineapple chunks (undrained, unsweetened if using canned)
1 t freshly grated lemon peel
1 lemon, peeled and seeded
1 fresh green chile, seeds removed for a milder flavor
1 cup chopped red bell peppers
1/4 cup chopped scallions
2 t grated fresh ginger root
Dash of Tabasco or other hot peper sauce to taste
Salt to taste
METHOD
Whirl all ingredients in blender or food processor to desired consistency. Add salt to taste.
NOTES
For topping bean and grain combos in burritos, "fish"-style seitan etc.
