Poblano Sauce
Condiments - Sauce -

INGREDIENTS
- 2 cups vegetable stock
- 1/4 cup red wine
- 2 dried red chiles, seeded, deveined & chopped
- 2 Guallio chiles, seeded, deveined & chopped
- 2 minced shallots
METHOD
Put all ingredients into a medium saucepan & bring to a boil. Simmer until the sauce is reduced by 1/2. Strain the sauce.
