Carrot, Sunflower Seed and Raisin Bran Muffins

INGREDIENTS
    • 2 1/2 cups wheat bran
    • 1 1/2 cups whole wheat flour
    • 1 t cinnamon
    • 1/2 t ground ginger
    • 1/2 t sea salt
    • 1/4 t ground nutmeg
    • 1 1/2 cups apple juice
    • 1/4 cup blackstrap molasses
    • 2 T sunflower oil, plus additional for oiling pan
    • 3/4 cup carrots, shredded
    • 1/2 cup sunflower seeds
    • 1/2 cup raisins

METHOD
Using a little sunflower oil, lightly oil a muffin pan and set aside.

In a large bowl, place the wheat bran, whole wheat flour, cinnamon, ginger, salt, and nutmeg, and stir well to combine. In a small bowl, place the apple juice, molasses, and sunflower oil, and whisk well to combine. Add the wet ingredients to the dry ingredients and stir well to combine. Add the remaining ingredients and gently fold them into the muffin batter.

Fill each of the prepared muffin cups 3/4 full with the batter. Bake at 350F/180C for 25-30 minutes or until an inserted toothpick comes out clean. Remove the muffin tin from the oven and allow the muffins to cool for several minutes before removing them from the muffin tin. Store the completely cooled muffins in an airtight container.

Yield: 1 Dozen

I registered on this site just so that I could post this comment. I found the recipe through Google and thought it sounded like it would be great. I love bran muffins A LOT, and the spices, the carrot, the seeds, the raisins... it sounded like it would be delicious.

I mixed them up, and when I was putting them into the cups, I thought to myself that it looked kind of ...bran-y. I mean, like really, really bran-y. The recipe had more bran than flour, but being an idiot (and one who loves bran muffins), I just followed it, and obediently scooped my dry and overwhelmingly bran-y mixture into the bowl. I tried a bit of the batter... it didn't really taste of much and was pretty dry, but I just ignored this (with hindsight, ignoring the fact that your batter tastes baaaad is not a good idea) and stuck them in the oven.

I wish I hadn't, because this is the only time in my entire life I have thrown something away right out of the oven.

This was like baked bran. Really, you needn't bother adding the other ingredients. Some of them are kind of expensive (compared to bran, anyway), and really, all you get at the end of following this recipe is baked bran. It starts to burn on top because it's so dry, and there's not enough liquid in this for the carrot to cook, so you really have bran with raw carrot mixed through. Sound bad? It is.

These muffins were SO disgusting. Against my better judgement, I tried a bit, and it was horrendous. It was like eating sawdust. I am sorry that this review is so long, but truly, I could write something 300 times this length and still not have enough words to convey quite how bad these are.

Did I mention how BAD these muffins are? Eeegh, I'm still picking bits of dried bran out of my teeth. Eeeeegh. Don't make them. Please, just don't make these horrible, horrible muffins.

You've got to at least love the passion that the muffins inspired in you!

I'm so sorry to hear that the muffins turned out so bad, and thank you for posting the warning to others...

Any suggestions for salvaging the recipe?

Hehe! You're right, passion is good!

I think they need less bran. Or more flour. Or something. Anyway, the proportions there were horrible.

The main problem though with these was the fact that there was no binding ingredient in here. Molasses just doesn't have the capability to actually bind stuff together when it bakes - you need banana, or ground flax and water, or vegan egg replacer, or something.

It also needs a raising agent of some kind.

Hi.I came across this recipe via Google and have read the comments.Would it not be a good idea to change the quantity of the flour and bran around - maybe add less bran - a cup instead of a cup and a half. And add some binding agent or take out one of the other ingredients.The thing with cooking is that it is should be experimental and fun - not disasterous or disgusting!These are just some thoughts of mine.May or may not help.With blessings.
