2. Puree the tofu then mix it with the tahini, 2/3 of the sugar, the lemon juice, salt and half of the vanilla essence.
3. Pour the mixture into the shell and bake in a moderate oven at 350F/180C/Gas Mark 4 for about half an hour. Remove from the oven.
4. Mix the yoghurt, remaining sugar and vanilla essence, and the cinnamon together. Spoon this mixture on top of the cheesecake, and bake at 425F/220C/Gas Mark 7 for 5 minutes. Allow to cool, then chill thoroughly until ready to serve.
