Breakfast Apple Cinnamon Oatmeal Squares

INGREDIENTS
    • 2 cups rolled oats
    • 1/4 cup brown sugar or sucanat
    • 1 t cinnamon
    • 1 medium apple, shredded or chopped
    • 1 t vanilla
    • 3/4 cup rice milk
    • 1/4 cup raisins

METHOD
Preheat oven to 350F/180C.

Prepare 8 x 8 inch (20 x 20 cm) square pan with cooking spray or oil.

In a medium bowl, mix oatmeal, brown sugar, cinnamon, and shredded or chopped apple. Add rice milk and vanilla, mix thoroughly. Stir in raisins.

Transfer mixture to prepared pan, spread and pat into pan.

Bake at 350F/180C degrees for approximately 30 minutes. Remove from oven, cut into squares in the pan, cool.


NOTES
I meant to post this recipe as another suggestion for a quick breakfast. These are very simple and easy to make, and rather pleasant to eat with a cup of tea or coffee for a quick breakfast or snack. I use Quaker old-fashioned rolled oats or generic equivalent.

Soy milk may be substituted for rice milk and blueberries may be substituted for raisins.

Variation: Fruit may be omitted from the oatmeal mixture. Spread half the oatmeal mixture in the pan, topped with a layer of fruit preserves or thick cooked fruit, and topped with the rest of the oatmeal mixture

We made these last weekend, and I enjoyed them. I did not have any rolled oats so I used Mornflake fine oatmeal instead. I found them pleasantly sweet and a lot more to my taste than flapjacks, which I usually find cloyingly sweet. I ate them with some raisins, dates and brazil nuts and a pot of tea.

This recipe did not turn out as expected! The "bars" crumbled and did not hold together, had to eat with a fork. . . it needs a binder.

I made this for the teacher appreciation breakfast and it turned out great!
I mixed it up the night before, using soy milk, raisens and dates, put it in the fridge overnight and baked it the next morning. The cut into beautiful squares and were a big hit.
~I baked it for 45 minutes instead of 30 in a gas oven.

Found this while looking for a healthy alternative to store bought oatmeal squares.
I replace the raisins with dried cranberries and dried blueberries (both very good anti-oxidants), then I add slivered almonds for protein, wheat germ for potassium, and flax meal for the lignans and omega-3 essential fatty acids.

Thanks for the tips, I'll definitely try your tips next time I make this!

I especially like the idea about dried cranberries - we've been using those more and more lately.
