All American Oatmeal and Peanut Butter Cookies

INGREDIENTS
  • 1 cup Sucanat (I use raw cane sugar)
  • 1 cup margarine
  • 1/2 cup natural peanut butter
  • Egg replacer for 3 eggs
  • 1/4 cup soymilk
  • 2 t real vanilla extract
  • 1 cup unbleached white flour or half whole wheat and half unbleached white flour
  • 2 t cinnamon
  • 1 t salt
  • 3/4 t baking soda
  • 3 1/2 cups quick cooking rolled oats
  • 1 cup seedless raisins
  • 1 cup chopped walnuts or pecans

METHOD
Preheat oven to 375F/190C.

In a large mixing bowl, cream together sugar, margarine and peanut butter. Add egg replacer, soymilk and vanilla; beat well.

In a separate bowl, stir together flour, cinnamon, salt and baking soda; add to creamed mixture. Beat until just well combined. Stir in rolled oats, raisins and nuts.

Drop by rounded teaspoonfuls onto lightly greased or non-stick cookie sheets. Bake in 375 degree oven for 10-12 minutes or until lightly browned.

Cool slightly before removing from baking sheets.

Makes about 7 dozen cookies.

i use ener-g egg replacer, which usually works well for baking. http://www.ener-g.com/ - What exactly are you looking to do? And I should probably make a general forum for stuff like this shouldnt I? hmmm...

...there seem to be quite a few options. some people just use the packaged egg replacers (eg. Ener-G); some throw in a banana and some extra baking powder; 1 T ground flax simmered in 3 T water; tofu! basically, whatever the egg is being used for (binding, liquid, rising) find something that should do something similar. good luck!

When baking I use applesauce and pureed fruit.
