Elvis School Days Cookies

INGREDIENTS

7 lb / 3.2 kg margarine
2 quarts (2 1/4 L) plus 1 cup unrefined sugar
4 T plus 2 1/2 t vanilla extract
8 lb / 3.5 kg all-purpose flour

METHOD

Preheat the oven to 400F/205C.

Cream the margarine and sugar until light and fluffy. Add the vanilla and flour. Mix well. Drop with a number 40 scoop on baking sheets and flatten with a fork. Bake for 10 to 12 minutes.

Makes 320 cookies.

NOTES

Anyone who attended Memphis schools in the 1950s remembers these delicions cookies. They were a luxurious treat and Elvis, like everybody else, looked forward to them after lunch.
