Grate the beets and set them aside. Heat the oil in a frying pan, add the mustard seeds, and wait until they start to sputter. Throw in the red chillies (if any) and fold in the greated beets. When the beets are about half done, fold in the peanut powder and chilli powder (if any) and cook until done. Stir well to prevent sticking and burning at the bottom.
Serve with chapatis and/or pilaf.
