Earth Spaghetti

INGREDIENTS
  • 1 large bunch of fresh kale
  • 250 grams / 8 ounces whole wheat spaghetti or linguini
  • 1/4 cup pine nuts
  • As much fresh garlic as you want
  • 1/4 cup virgin olive oil

METHOD
Boil a big pot of water and prepare to cook your pasta (if you like, chop a big sweet onion to add below).

Saute the pine nuts, garlic and olive oil for about 5 minutes.

Strip your kale off of its stalks, tear into bite-size pieces and put it into the steamer.

Start cooking your wholemeal pasta.

Steam the kale at the last minute. Mix the the kale with the oil/garlic/pinenuts; serve a big bunch on top of a nice pile of wholemeal spaghetti.
