Orange-Chocolate Cake

INGREDIENTS
      Cake

    • 1.5 cups flour
    • 1 cup milled cane sugar
    • 1/4 cup cocoa powder
    • 2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/3 cup vegetable or canola oil
    • 1 teaspoon vanilla extract
    • 1 cup orange tea (cooled), thin orange juice, or water

      Frosting

    • 1 stick soy margarine, softened but not melted
    • 10 oz marmalade
    • Milled cane sugar, to taste
    • Dash of salt
    • Vanilla extract (optional)
    • One bag dairy-free semi-sweet chocolate chips (or two 10-oz bars), melted
    • 1/2 cup cocoa powder
    • 1/4 cup soymilk or orange juice

METHOD
Preheat oven to 350 F (175 C). Grease 2 round cake pans with veg. Shortening or oil.

Mix the dry ingredients in one bowl, and the wet ones in another. Then add the liquid to the dry mixture, and blend.

Pour the batter into the 2 cake pans, and bake for 25 minutes or so, until a fork stuck in the middle comes out clean.

I find that if I'm using 9 inch cake pans, the above recipe will only make enough batter for one layer. Also, the instructions for making the frosting seem to be missing. I made this cake for a party, and it went over well. Instead of making the frosting, I put a coating of black cherry preserves between the two layers, and coated the top of the cake with a little melted chocolate.

I came to this site looking for a vegan orange almond cake, found the recipe above and gave it this twist.

Instead of the coco powder, i added the same of ground almonds. I also used fresh, strained orange juice (1 and a quarter cups) instead of the tea.
Instead of the frosting i made a syrup to pour over the cake as soon as it comes out of the oven. This was made up of 1 cup fresh orange juice and half a cup of sugar boiled together till the sugar melted. Enjoy :)

I made this cake yesterday, & unfortunately I didnt like it. I put it in the fridge overnight, & the frosting set rock hard. If you are a dark chocolate lover, I think you would enjoy it, but it wasnt for me. I used the orange tea inthe sponge. I found it difficult to detect the orange flavour, & was overwhelmed by the cocoa. But I enjoyed making it! It did taste better warmed up.
