Slice them lenghtwise using a peeler to get long thin strips along with a carrot or two and a small sweet potato. Mix a dollop of peanut butter with a dash of tamari and a clove of pressed garlic. Add a bit of maple syrup and some flax seed meal. Thin with water and a dash of cider vinegar and use as a dressing for the raw veggies. I sometimes add sunflower seeds or toasted sesame seeds & a dash of pomegranite syrup. Makes for a very tasty raw salad!
