Gingered Spinach

INGREDIENTS
- 1 T minced ginger
- 2 cloves minced garlic
- 2 T oil
- 1 lb / 450 g spinach
- 1 T apple cider vinegar
- 1/4 t crushed red pepper
- 1/4 t sea salt
- 1/4 t pepper
METHOD
In a large skillet sauté the ginger and garlic in oil over med heat for one minute. Add the red pepper and spinach. Stir-fry for about two minutes, then add the remaining ingredients and give it all a good toss.
NOTES
Spinach is really good for you and tastes much better than it did when you were a kid.
