INGREDIENTS
    • 5 ripe avocados
    • 1 large tomato, chopped into large chunks
    • 1 small red onion, diced
    • 1 garlic clove, finely chopped
    • 2 T tamari (or soy sauce)
    • Juice of 1 lemon

METHOD
Halve each avocado. Remove the seeds (pits), skins and stems. Cut the avocados into 1/2 inch / 13 mm chunks. Combine all the ingredients in a large bowl. Stir with a large spoon, mashing the avocado slightly as you go. Continue until it's the desired consistency. The lemon juice is an important ingredient, especially if you are not serving immediately. It will preserve the avocado. Otherwise avocado tends to discolor very quickly.
