Vegetable Nut Mold (Raw)

INGREDIENTS
    • 2 medium carrots, shredded
    • 2 stalks celery, shredded
    • 1/2 cup green peas, shelled
    • 1/2 bunch scallions, minced
    • 1 1/2 cups walnuts, chopped
    • 2 ears corn, decobbed
    • 1 small yellow squash, shredded
    • 3 cups vegetable broth
    • 1/2 cup Almond Mayonnaise
    • 2 T Braggs
    • 5 T agar flakes
    • Minced parsley garnish

METHOD
Dissolve agar flakes in three cups of vegetable broth, heating gently. Set aside.

Combine all remaining ingredients. Mix together with agar broth until well combined. Put into a bundt pan mold or springform. Chill until firm.

Serve on bed of sprouts with a minced parsley garnish.
