Roasted Vegetable Pasta Sauce

INGREDIENTS
    • 2 T olive oil
    • 1 red pepper, deseeded and roughly chopped
    • 1 bulb of fennel, roughly chopped
    • 1 red onion, peeled and quartered
    • Handful of cherry tomatoes
    • Handful of mushrooms halved
    • 1 carrot roughly chopped
    • 1 bulb of garlic separaeted into cloves (do not peel)
    • Sage, rosemary, thyme, oregano & marjoram (a good pinch of each)
    • 1 x 14 oz / 400 g can of tomatoes
    • 1/2 t chilli flakes
    • Salt and pepper, to season

METHOD
Mix all the ingredients except the tinned tomatoes and the chilli flakes together in a non-stick roasting dish and bake at 180C/350F for an hour, then increase the temp to 200C/390F for half an hour, until the veggies are soft. In a large saucepan mix the roasted veggies with the remaining ingredients and simmer on a low heat for about 20 minutes. Let this cool down then liquidize and sieve, season to taste.

NOTES
This dish takes a long time to cook but it is worth the effort.
