Mix all the ingredients except the tinned tomatoes and the chilli flakes together in a non-stick roasting dish and bake at 180C/350F for an hour, then increase the temp to 200C/390F for half an hour, until the veggies are soft. In a large saucepan mix the roasted veggies with the remaining ingredients and simmer on a low heat for about 20 minutes. Let this cool down then liquidize and sieve, season to taste.
This dish takes a long time to cook but it is worth the effort.
