Jerk Potatoes

INGREDIENTS
3 large potatoes
1-2 T oil
1-2 T jerk seasoning (dry) - see below
1/2 cup water or vegetable stock
Fresh parsley, chopped for garnish
Jerk Seasoning (Dry)
2 T onion powder
1/2 t garlic powder
2 t ground thyme
1 1/2 t salt
1/4 t ground nutmeg
1/2 t ground cinnamon
2 T unrefined sugar
1 1/2 t powdered hot pepper (cayenne)
1 t ground pimento (Jamaican allspice)
METHOD
Steam the potatoes until tender, and cut them into cubes. Heat the oil in a skillet. Stir in the jerk seasoning, then add the potatoes and water/stock.
Cook until the water evaporates and the mixture is dry. Stir in the chopped parsley and serve.
Jerk Seasoning (Dry)
Combine all the ingredients and store in an airtight jar.
