Enoki No Saka-Mushi (Japanese Style Enoki Mushrooms with Sake)

INGREDIENTS
    • 3 1/2 oz / 100 g enoki mushrooms
    • 2 t extra virgin olive oil
    • 2 T dry sake
    • Salt to taste

METHOD
Preheat oven to 375F/190C.

Trim the bottom 1/2 inch / 13 mm off the enoki mushrooms. Break into 2 or 3 clumps and place in a small baking dish. Drizzle on the olive oil and sake, sprinkle with salt. Cover and bake for 10 to 15 minutes.

Serve as an appetizer.
