Pad Het, Nomai, Tualangdao (Thai Shiitake, Bamboo Shoot and Mangetout Stir Fry)

INGREDIENTS
- 1 T ground nut oil
- 2 large garlic cloves, chopped
- 125 g / 4 oz baby corn, sliced obliquely
- 10 dried shiitake mushrooms, soaked, drained and sliced
- 125 g / 4 oz drained canned bamboo shoots
- 50 g / 2 oz mangetout (snow peas), topped and tailed
- 1 t sugar
- 3 T soy sauce
- 1 T water
- Ground black pepper to taste
METHOD
Heat the oil in a wok and add the garlic. Give it a quick stir around, then add all the rest of the ingredients in turn. Stir fry over a high heat for 2-3 minutes, then turn out on to a serving dish. Serve at once, with rice.
