Pad Het, Nomai, Tualangdao (Thai Shiitake, Bamboo Shoot and Mangetout Stir Fry)

INGREDIENTS
    • 1 T ground nut oil
    • 2 large garlic cloves, chopped
    • 125 g / 4 oz baby corn, sliced obliquely
    • 10 dried shiitake mushrooms, soaked, drained and sliced
    • 125 g / 4 oz drained canned bamboo shoots
    • 50 g / 2 oz mangetout (snow peas), topped and tailed
    • 1 t sugar
    • 3 T soy sauce
    • 1 T water
    • Ground black pepper to taste

METHOD
Heat the oil in a wok and add the garlic. Give it a quick stir around, then add all the rest of the ingredients in turn. Stir fry over a high heat for 2-3 minutes, then turn out on to a serving dish. Serve at once, with rice.

Very good recipe. I would add some spices though to make things more interesting (I recommend cayenne pepper and ginger)
