Markit Ommalah (Tunisian Chickpea and Lentil Stew)

INGREDIENTS
- 4 T olive oil
- 2 medium onions, chopped
- 4 cloves garlic, finely chopped
- 1/2 cup finely chopped cilantro
- 1 cup lentils, soaked overnight and drained
- 3 cups cooked chickpeas
- 4 medium tomatoes, chopped
- 1 t cumin
- 1/2 t thyme
- 1/8 t cayenne
- Salt and pepper to taste
- 3 cups water
- 1/4 cup chopped green olives
- 2 T lemon juice
METHOD
Heat oil in a saucepan and saute onions, garlic and cilantro for 5 minutes. Stir in remaining ingredients,
except olives and lemon juice, and bring to boil. Cover and cook over medium heat for 40 minutes or
until lentils are well cooked, adding more water if necessary. Stir in olives and lemon juice and simmer
for another 5 minutes and serve.
