Yam Het (Thai Mushroom Salad)

INGREDIENTS
- 125 g / 4 oz dried black fungus (or dried black mushrooms) soaked and drained
- 15 g / 1/2 oz celery stalk, finely sliced
- 1 shallot, sliced
- 5 small fresh green or red chillies, finely sliced and de-seeded
- Juice of 2 limes
- 2 t sugar
- 1 t salt
METHOD
Boil the mushrooms for 5-6 minutes, drain and place in a serving dish. Add all the rest of the ingredients and mix thoroughly.
