Stuffed Banana Salad

INGREDIENTS
      For one person:

    • 1 oz / 30 g raisins or sultanas
    • 2 oz / 60 g peanut butter
    • 4 small bananas
    • 2 T vegan mayonnaise
    • 2 T salted peanuts
    • As required crisp lettuce leaves

METHOD
Chop the raisins finely. Mix them together with the peanut butter.

Peel and split the bananas lengthwise and fill them sandwich fashion with the peanut butter raisin mixture. Spoon the dressing over the bananas and top with salted peanuts.

Serve on crisp lettuce leaves.
