Rainbow Sprout Salad
Salad - Vegetable -

INGREDIENTS
- 1 small red onion, finely diced
- 1 large carrot, grated
- 6 cherry tomatoes, halved
- 1/2 cucumber,cut lengthways & sliced
- 1 large handful of watercress, washed
- 1 x 4 oz / 115 g box mung sprouts
- 1/2 handfull of fresh herbs, preferably coriander or mint
Dressing
- 3 T olive oil
- 1 T balsamic vinegar
- 1/2 t coarse grain mustard
METHOD
Toss all the ingredients together in a bowl. Serve with dressing (a Mrs Falafel original recipe) if desired.
NOTES
This is a favourite breakfast at the Fresh & Wild kitchen.
