Hot Tofu Salad

INGREDIENTS
    • 1/2 dl (Note: I think this is 50 ml / 1.7 fl oz) sweet chili sauce
    • 1 t minced garlic
    • 1 t minced ginger
    • 2 t soy sauce
    • 500 g / 1.1 lb firm tofu - diced in 1 cm / 0.4 inch cubes
    • 2 t oil
    • 2 carrots, sliced
    • 2 courgettes/zucchinis, sliced
    • 6 spring onions, sliced (3 chopped normal onions also works here)
    • 100 g / 3.5 oz sweet peas

METHOD
1. Put chili sauce, garlic, ginger and soy sauce in a bowl. Add tofu. Set aside and let it marinate for 10 minutes.

2. Drain the tofu and set the marinade aside. Saute the tofu, in half of the oil at high heat for about 4 minutes. Take tofu out of frying pan and set aside.

3. Heat up the rest of the oil and saute the vegetables for 2-3 minutes by high heat. Add the tofu and the marinade from before and bring to boil while stirring, carefully, making sure everything gets mixed. Serve immediately.


NOTES
Yes - I managed to make it and it turned out good! Yay! I've even saved one helping to see what it's like cold, tomorrow...
