Grated Carrot Salad

INGREDIENTS
    • 4 cups grated carrots
    • 1/4 cup raisins
    • 1/4 cup crushed pineapple (fresh or canned)
    • 1/4 cup chopped pecans
    • 2 T honey
    • 1 cup eggless mayonnaise
    • Juice of 1 lemon

METHOD
Blend the carrots, raisins, pineapple, pecans and honey at high speed. Add the mayonnaise and the lemon juice until a coleslaw-like consistency is obtained. Chill and serve alone or on a bed of lettuce topped with sprouts.
