Grated Carrot Salad

INGREDIENTS
- 4 cups grated carrots
- 1/4 cup raisins
- 1/4 cup crushed pineapple (fresh or canned)
- 1/4 cup chopped pecans
- 2 T honey
- 1 cup eggless mayonnaise
- Juice of 1 lemon
METHOD
Blend the carrots, raisins, pineapple, pecans and honey at high speed. Add the mayonnaise and the lemon juice until a coleslaw-like consistency is obtained. Chill and serve alone or on a bed of lettuce topped with sprouts.
