Kibbet Hummus (Chickpea and Burghul Patties)

INGREDIENTS
    • 1 cup dry burghul
    • 1 x 19 oz / 540 g can chickpeas, drained
    • 2 medium onions, chopped
    • 4 cloves garlic, crushed
    • 1/4 cup finely chopped fresh cilantro
    • 1 t baking powder
    • 1 t baking soda
    • 1/2 t cumin
    • 1/2 t allspice
    • Pinch cayenne
    • Salt and pepper to taste
    • 1 cup flour
    • Oil for frying

METHOD
Soak the burghul in boiling water for 5 minutes; then drain in a strainer, pressing out as much water as possible.

Place all ingredients, except flour and oil, in a food processor and process until a soft paste is formed. Place in a mixing bowl; then add flour and mix thoroughly. Form into balls the size of walnuts (if batter is too sticky, add more flour; if too stiff, add a little water). Flatten into patties about 1/4 inch / 7 mm thick.

Heat oil about 1/2 inch / 13 mm deep in a saucepan and fry patties a few at a time over medium high heat until they turn golden brown, turning them over once (about 10 minutes on each side). Remove and place on paper towels to drain.

Serve either hot or cold (they reheat well on foil plates in the oven).

It's really hard to find this ingredient around here. Is there any possible subsitute for it?

So what if I fall flat on my face? Life's too short to count my mistakes.

This recipe sounds delish! maybe it is supposed to be bulgar? that could be it...
