Pasta with Tomatoes and Chili

INGREDIENTS
    • 373 g / 13 1/4 oz penne-pasta (or any kind, really)
    • 3/4 dl / 75 ml / 2.5 fl oz olive oil
    • 1 t chili oil
    • 2 - 3 cloves of garlic, minced
    • 1 small, red chili, chopped
    • 200 g / 7 oz rucola lettuce
    • 1 can of mexican chili-beans
    • 4 ripe tomatoes, finely chopped
    • 95 g / 3 1/2 oz small black olives

METHOD
1. Boil the pasta - set aside and keep hot.

2. Put oil (both), garlic and chili in a small pot - heat by low heat for 5 minutes, without the garlic gaining colour.

3. Rinse, dry and slice the lettuce.

4. Pour beans, tomatoes and olives into a big serving-bowl, spice with pepper. Add the hot pasta and spicy oil. Blend and add salt/pepper to taste. Add the lettuce, blend and serve immediately.


NOTES
I just made this and it was very, very good! Yum! Also found in the book about fast vegetarian recipes. The version I made was a bit different, but it came out very, very mild - I also have a strong feeling that it will be great to eat cold tomorrow...
