Costigan's Spicy Hot Tomato Sauce

INGREDIENTS
- A couple of kilos (4 1/2 lb) of over ripe roma tomatoes, or an A10 tin of chopped tomatoes
- A couple of onions (preferably the sweet red ones)
- Chopped garlic to taste (I use lots)
- One red capsicum
- Herbs (fresh basil is best) and a bay leaf
- Hot chilli sauce or chopped chillies, to your liking
- 375 g / 13 1/4 oz tomato paste
- White wine (if it's a good one use half and drink the rest)
METHOD
Saute onions, garlic, capsicum, herbs and chillies in olive oil till soft and golden. Add
tomatoes. Heat tomato paste in wine and add to pot. Simmer for an hour or so.
