Asian Mushroom Spaghetti

INGREDIENTS
    • Cooked spaghetti (for 2 generous servings)
    • 3 - 4 cups of sliced mushrooms (use 3 of your favorite varieties, if possible; I like button, crimini and shitake)
    • 1/4 cup of salted margarine
    • Handful of large alfalfa sprouts
    • Light soy sauce to taste
    • Optional: sesame seeds, baked tofu, or the protein of your choice

METHOD
1. Saute the mushrooms in half the butter or margarine on medium heat until tender. Do not overcook... since mushrooms are mostly water, overcooking will result in a soggy dish with too much liquid!

2. Add the rest of the butter or margarine and toss in the pasta. Turn off heat. Continue tossing until all the butter/margarine has melted.

3. Add a splash of light soy sauce to taste. This is just for saltiness... the pasta does not need to taste like soy sauce. The mushrooms will infuse with the butter/margarine to produce a lovely, delicate flavor.

NOTES
Here's a pretty yummy dish that I created... surely able to win over your non-vegetarian friends. I'm a bit of a gourmet chef, so I apologize in advance for the high fat content.

In the chinese culture, we believe that drinking plenty of hot tea with meals will negate the greasiness of the meal. If you're so inclined, enjoy this dish with a nice pot of green tea!
