Seitan

INGREDIENTS
      Dough

    • 4 cups gluten flour
    • 2/3 cup white flour
    • 2 T bran flakes
    • 3 1/2 cups water

      Beefy Broth

    • 1/4 cup soy sauce
    • 1 T kitchen bouquet
    • 1/4 cup nutritional yeast
    • 1 cup chopped onion
    • 1/2 t rubbed sage
    • 4 cups water

      Chickeny Broth

    • 1 cup chopped onion
    • 1 T msg -- (or add extra salt if you object to msg)
    • 2 t salt
    • 2 t poultry seasoning
    • 2/3 cup nutritional yeast
    • 4 cups water

METHOD
Knead dough ingredients together till firm & springy. Divide it into three parts and roll each part into a log about 6 inches / 15 cm long. Wrap each piece loosely (they'll expand) in a 10 inch / 25 cm length of cheesecloth and tie the ends with kitchen twine.

Boil your chosen broth ingredients together in a big pot for five minutes, then carefully arrange your gluten logs in the pot. Cook for 1 1/2 hours conventionally, or 45 minutes in a pressure cooker at 15 psi.

Each of the three logs of seitan you get here is big enough for a meal serving 4-6 people. It freezes well.

Seitan is BEST if you have a close to 1:1 ratio of wheat flour and gluten flour, so that it is not IMPOSSIBLY chewy! A little bit more on the gluten side of course. Also in stead of using water, use flavoured veg stock to imporve the flavour all of the way through, and you can season the flour BEFORE you add any liquid, this keeps you from having too little too late flavourless gluten. YUCK!
