When ready to cook, coat the pieces with the bread crumbs. Heat the oil in a heavy 10 inch / 25 cm skillet until very hot over medium-high heat. Fry the pieces until crisp and golden on both sides. Drain on paper towels. Quickly wipe any oil out of the pan, and add any marinade that is left over. Cook it over high heat until it reduces somewhat and drizzle over the cutlets.
