East Indies Meatballs

INGREDIENTS
    • 1 pkg. 'Gimme Lean' beef style
    • 1 x 20 oz / 560 g can pineapple chunks
    • 2 T oil
    • 1/2 t curry powder
    • 1 T soy sauce
    • 1/4 cup sugar
    • 1/4 cup chopped onion
    • 1 T cornstarch
    • 1/3 cup white vinegar

METHOD
Drain pineapple chunks, reserving 1/2 cup syrup, set aside.

Combine 'Gimme Lean' and onion. Shape mixture into meatballs, inserting a pineapple chunk into the center of each. Set any remaining pineapple chunks aside.

Combine oil and curry powder in a non-stick pan. Brown meatballs in butter mixture of medium heat.

Drain meatballs, adding drippings to the following: reserved pineapple syrup, curry drippings, vinegar, sugar, cornstarch and soy sauce in sauce pan; stir well. Add pineapple chunks; cook over medium heat, stirring constantly, until thickened and bubbly. Pour over meatballs.

Serve warm. Great over rice with steamed oriental vegetables.


NOTES
'Gimme Lean' is just a ground meat substitute (ie soya mince). For those of you who will have to use some other brand, I believe that 'Gimme Lean' comes in 12 oz / 340 g packages.
