Mrs Falafel's Enchiladas

INGREDIENTS
    • 8 flour or corn tortillas
    • 2 oz / 60 g vegan "chedder" (in the UK, use Cheezly) finely chopped or grated (optional)

      Mole Sauce

    • 1 onion, diced finely
    • 1 t sunflower oil
    • 1 clove garlic, finely chopped
    • 1 green chilli, finely chopped (deseeded if needed)
    • 14 oz / 400 g tin tomatoes
    • 2 T tomato puree
    • 1 t cocoa powder
    • 1 t ground cumin
    • 1 t oregano
    • 1 t lime juice
    • 250 ml / 1 cup water
    • 1/2 t sugar
    • Salt & pepper

      Filling

    • 1 small onion, finely diced
    • 1 t sunflower oil
    • 200 g / 7 oz veggie mince, frozen or reconstituted dried
    • 1 tin 14 oz / 400 g kidney beans, drained
    • 1 t ground cumin
    • 1 t thyme
    • 1/2 t cayenne
    • 1 t oregano

METHOD
Mole Sauce

Fry the onion, garlic & chilli until soft the add the rest of the ingredients. Simmer for 10 minutes, leave to cool for a minute then liquidize.

Filling

Fry the onion in the oil until soft, add the mince, beans & spices with 4 T of the mole sauce. Mix together & take off the heat.

Spread 1 T of the mole sauce on the bottom of a baking pan. In each of the tortillas spread a T of the mole sauce followed by the filling & a small amount of "cheese". Roll up the tortillas and place side by side in the pan. When all the tortillas are in the pan cover with the remaining mole sauce.

Bake in the oven for 15-20 mins at 180C/350F.
