Garlic Relish

INGREDIENTS
    • 4 oz / 100 g wholemeal breadcrumbs
    • 1/4 pint / 150 ml hot water
    • 1 large onion
    • 2 oz / 50 g margarine
    • 1 oz / 25 g fresh yeast
    • 2-3 crushed garlic cloves
    • 1 T thyme
    • Salt and pepper to taste

METHOD
Soak the breadcrumbs in hot water. Finely chop the onion.

Melt the margarine in a saucepan and sauté the onion until transparent. Add the soaked bread and any excess liquid and cook over a high heat, stirring all the time until no free liquid remains. Off the heat.

Crumble in the yeast and add the remaining ingredients. Adjust seasonings. Beat well and press into shallow serving dish. Cover and leave to cool.

Serve on individual plates with a salad garnish and triangles of wholemeal toast.


NOTES
This can also be used as a sandwich filling.
