Patate In Tegame (Baked Sliced Potatoes with Tomatoes)

INGREDIENTS
    • 675 g / 1 1/2 lb potatoes, thinly sliced
    • 2-4 cloves garlic, thinly sliced
    • 340 g / 12 oz fresh ripe plum tomatoes, thinly sliced; or 1 x 435 g / 15 oz can plum tomatoes or diced tomatoes, drained
    • 2 1/2 T olive oil
    • 1/4 cup soy parmesan
    • Salt and pepper to taste

METHOD
Oil a 25 cm / 10 inch glass or ceramic baking dish or pie plate with olive oil. If you are using the canned tomatoes, break them up with your hands. Preheat oven to 190C/375F.

Layer 1/3 of the potatoes in the dish. Sprinkle with salt and pepper. Layer on 1/3 of the tomatoes, half the garlic and sprinkle on 1 T of soy parmesan. Drizzle with 1/2 T olive oil. Repeat layering twice then sprinkle the top with 2 T of soy parmesan and drizzle with 1 T olive oil. Cover the dish and bake for about 1 hour. Uncover the dish and bake 15 minutes more or until the potatoes are tender and the top is golden. Serve hot.
