In a deep, lidded saucepan, heat oil and sauté the onion and garlic for 3 minutes. Add zucchini. Saute for 5 minutes. Add the tomato, dill, mint, parsley, sugar, salt and pepper. Saute for 3 minutes. Add water, reduce heat to a simmer and cook for no longer than 5 minutes. Do not overcook.
Serve hot or cold. Serves 4 as a side dish.
