Chilli Apple Mash

INGREDIENTS
  • 1.5 kilograms / 3.3 pounds floury potatoes cut into 4 centimeter cubes
  • 3 braeburn apples, peeled, cored and roughly chopped
  • 50 grams / 1 3/4 ounces margarine
  • 2 tablespoons chilli sauce
  • 100 milliliters / 0.2 pint soy cream or soy milk
  • Seasoning

METHOD
Place the potatoes in a large pan of lightly salted water. Bring to the boil and simmer for 8 minutes. Add the apples and cook for 2 minutes until just tender. Drain and return to the pan. Heat over a low flame for 1 minute to drive off and excess moisture.

Add the margarine, chilli sauce and soy cream to the pan. Heat for 1 minute, then mash until smooth. Season to taste.
