Sweet 'n' Sour Sauce

INGREDIENTS
- 1/3 cup dried pineapple chunks
- 2 x 1/2 cups of spring water
- 2-3 T tamari (or soy sauce), as desired
- 1 T grated fresh ginger
- 1/2 cup lemon juice
- 1 T barbeque spice
- 2 t liquid sweetener (eg. maple syrup)
METHOD
Soak the pineapple in the first 1/2 cup of spring water until soft, about 10 minutes. Blend the pineapple and water in a food processor until the pineapple is smooth. Add tamari, ginger, lemon juice and the second 1/2 cup of spring water. Continue to blend together. Next add the barbeque spice and sweetener. Continue blending. Taste and make any necessary adjustments.
