Chilled Mint and Cucumber Soup
Soup - Chilled -

INGREDIENTS
- 1 cucumber, peeled and chopped
- 1 garlic clove, crushed
- 1 spring onion, chopped
- 300 milliliters / 1 1/4 cups soy yogurt
- 3 tablespoons soy milk
- 2 tablespoons fresh mint, finely chopped
- 1 teaspoon ground coriander
- Salt and pepper
- Diced cucumber, to garnish
- Sprigs of mint, to garnish
METHOD
Puree all the ingredients together in a liquidiser, and then transfer to a large bowl. Season well and chill the soup thoroughly in the refrigerator before serving. Garnish with mint and diced cucumber.
