Southern Style Black Eyed Peas over Rice

INGREDIENTS
    • Oil
    • 1 onion, diced
    • 1 green pepper, diced
    • 3 or more cloves garlic, minced
    • 1 x 15 oz / 450 g can whole peeled tomatoes
    • 1 x 15 oz / 450 g can black-eyed peas (dry cooked)
    • 1 t paprika
    • 1/2 t oregano
    • 1/2 t thyme
    • 1/2 t black pepper
    • 1 T fake bacon bits
    • Tabasco sauce
    • 2 cups dried rice, cooked

METHOD
In a saucepan, sauté onions, pepper & garlic in some oil until onions are translucent. Add spices and cook a bit more. Add tomatoes & bacon bits and simmer, smooshing and chopping the tomatoes. When the tomatoes are soft, add blackeye peas and simmer until all is heated through.

Serve in big bowls over rice.
