Sourdough Pancakes (or Waffles)

INGREDIENTS
    • 2 cups of sourdough starter
    • 2 T sugar
    • 1/4 cup oil, canola or soybean
    • 1/4 cup egg replacer
    • 1/2 t salt
    • 1 t baking soda

METHOD
Start the night before making. Add 1 cup of flour and water to the mother starter to build it up.

In the morning, pour out two cups of starter into a 6-8 cup mixing bowl. Add sugar, salt, egg substitute, and oil. Mix well. Let rest a few minutes.

Sprinkle baking soda over mixture. Gently fold in.

Now the magic begins. The batter will start to rise and thicken. You did use a big enough mixing bowl, didn't you? Begin cooking immediately. The batter will hold for about 20 minutes. That's about how much time you'll need to cook it all. It's also why you should not double the recipe. Left over waffles freeze well.

I have just recently become vegan, and have been making sour dough pancakes for many, many years. How are they with our real eggs, and do you have to use egg replacer? I make my own starter, just need tips for the pancake. Also how to stay vegan while on an island. So many dishes have dairy in them. Thanks for any tips you can share.

For pancakes and such I most often use ener-g egg replacer, seems to work pretty well but the best thing to do is to try things out and see what works best for you. (and with your experience with keeping a sourdough starter you should be right at home with experimenting!)
