Rainbow Fruit Pie

INGREDIENTS
    • 1 1/2 packages Tofutti 'Better Than Cream Cheese'
    • 1 package 'Hip Whip', thawed
    • 1/3 cup sugar
    • 1 T lemon juice
    • 1/4 cup apricot preserves, with 1 T water
    • Assorted fresh fruit (strawberries, kiwi, blueberries, etc.)
    • Prepared graham cracker crust

METHOD
Beat cream cheese, sugar, and lemon juice until smooth. Gently fold in 'Hip Whip'. Spread into graham cracker crust. Arrange fresh fruit on top and glaze with preserves, which have been thinned with water. Chill 2-3 hours before serving.
