Plain Jane Pancakes

INGREDIENTS
    • 1/2 cup whole wheat flour
    • 1/2 cup unbleached white flour
    • 1 T baking powder
    • 1/4 t salt
    • 1 cup soy, rice, or almond milk
    • 2 1/2 T oil
    • 2 T liquid sweetener (maple syrup, rice syrup, etc.)
    • 1/2 t ground cinnamon

METHOD
Combine dry ingredients in a bowl. Whisk in the rest of the ingredients just until combined; don't overmix! Cook on a nonstick griddle over medium high heat for a minute or two, then flip.
