Pineapple Coleslaw

INGREDIENTS
    • 2 cups water
    • 3 T corn starch
    • 1/2 cup unsweetened pineapple juice
    • 3 T fresh lemon juice
    • 1 T vanilla extract
    • 1/2 head green cabbage, shredded
    • 1/8 head red cabbage shredded
    • 1 cup shredded carrot
    • 1 cup crushed pineapple in its own juice, drained

METHOD
In a saucepan combine water and cornstarch. Bring to a boil and cook, stirring, until clear. Remove from the heat. Add the fruit juices and vanilla.

Combine the vegetables and pineapple. Add the dressing and mix well. Chill for 2 hours before serving.
