Pignoli Cheesecake (Raw)

INGREDIENTS

3 cups pignoli nuts
1 t orange rind
1 cup coconut, shredded
1/2 cups dates, pitted
4 T agar flakes
2 cups apple juice
1/4 cup maple syrup

METHOD

Process coconut, orange rind and dates with S blade until combined and press into a springform pan. Heat agar in apple juice until agar is completely dissolved. Blend the nuts, agar mixture and syrup together. Pour over crust in springform and chill until firm.
